Chicken and Chickpea Jalfrezi

Indulge in the exquisite flavours of a homemade Chicken and Chickpea Jalfrezi curry, a culinary delight that is not only delicious but also a healthier option due to its low-fat content. This recipe is a perfect balance of spices and ingredients, creating a dish that is bursting with flavour. To enhance the nutritional value of this dish, we have incorporated fresh spinach and butternut squash. These ingredients not only add a pop of color to the curry but also provide additional vitamins and minerals, making it a wholesome meal choice.

Jalfrezi Chicken & Chickpea Curry Recipe


You will need...


Ingredients

  • 3 tablespoons of our Great Northern Spice Jalfrezi Curry Blend

  • 4 boneless and skinless chicken thighs, diced

  • 2 tablespoons rapeseed oil (or olive oil)

  • 1 garlic cloves, chopped, or 1 tsp garlic paste

  • 1 tsp ginger paste or chopped ginger

  • 1 medium red onion, finely diced

  • 1 small red bell pepper, sliced

  • 1 small green bell pepper, sliced

  • 1 green chilli, de-seeded and finely sliced

  • 1 tablespoon tomato purée

  • 50ml water

  • 150ml passata

  • 200g half a tin of chickpeas, drained


For an extra healthy curry...

  • Add small chunks of butternut squash with the chicken

  • Add a handful of fresh spinach leaves, stalks removed (optional)


How to cook

  1. Heat the oil in a large pan on a medium-high heat.

  2. Fry the red onion for 2 minutes, then add the garlic and ginger and fry for a further 3 minutes.

  3. In a large bowl, add the chicken, splash over a tablespoon of oil and mix in 3 tablespoons of our Jalfrezi Curry Blend.

  4. In the pan, add the tomato puree, passata, green chilli and bell peppers. Mix in and fry for another 2 minutes.

  5. Add the chicken, then simmer on a medium heat for 10 minutes, stirring occasionally.

  6. Now add the water and drained chickpeas and stir in. Leave to simmer for a further 10 minutes. Tips: For an extra healthy curry, stir in a handful of fresh Spinach leaves and leave to wilt for around 3-4 minutes before serving.

  7. Ensure your chicken is thoroughly cooked, then serve with your choice of sides, garnish with fresh chopped coriander and enjoy!
