Creamy Cajun Cajun Pasta Recipe

Cajun Creamy Chicken Pasta Recipe


You will need...


Ingredients

  • 2 tablespoons Great Northern Spice Louisiana Red Cajun seasoning

  • 2 boneless and skinless chicken breast, diced

  • 100g pancetta

  • 200g of your choice of pasta

  • 2 tablespoons olive oil

  • 200ml chicken stock (we use Knorr stock pots)

  • 150ml double cream

  • 1 tablespoon tomato puree

  • 1 red pepper, diced small

  • 2 handfuls of sliced mushrooms

  • 2 handfuls of spinach, destalked

  • 60g parmesan, plus extra to serve

  • 10g chopped parsley (optional)


Healthy option...

  • Swap white pasta for wholemeal or red lentil pasta


How to cook

  1. Heat the oil in a large pan on a medium-high heat.

  2. Add the diced chicken to a bowl with 1 tablespoon of rapeseed oil. Sprinkle over a tablespoon of our Cajun Seasoning and mix together.

  3. Pan-fry the chicken and pancetta until cooked throughout - about 15 minutes.

  4. Add an extra tablespoon of our Cajun Seasoning, along with the tomato purée and stir in. Add the diced red pepper, mushrooms and spinach, cook until veg is soft and the spinach is wilted.

  5. Pour in the chicken stock and double cream, reduce to a low heat and simmer until it thickens - about 10 mins.

  6. In a pan of boiling water, add 1 teaspoon salt and start cooking your pasta according to the packet instructions until al dente - about 10 mins. For softer pasta, cook for an extra 2-3 minutes.

  7. Add the grated parmesan and parsley in with the chicken - stir well.

  8. Drain the pasta, then add to the pan of sauce. Stir to coat the pasta evenly.

  9. Serve in a bowl, grate over a little bit more parmesan and enjoy.
