Mexican Fish Tacos Recipe
You will need...
Ingredients
2 tablespoons of our Great Northern Spice Mexican Fiesta Seasoning
2 Large Cod Loins (cut into small goujons)
6-8 small tortillas
1 red bell pepper (finely sliced)
1 red onion (finely sliced)
1 tablespoon rapeseed oil (or olive oil)
3 tablespoons of Panko Breadcrumbs
How to cook
1. In a large bowl, add the Panko Breadcrumbs and 1 and a half of our Mexican Seasoning.
Individually coat your fish goujons in the mix, and place in the air fryer, or oven tray.
Set the air fryer to 200℃ for 12 minutes, turning halfway through. For oven users, set your temperature to 180℃ for 15 minutes. Check the fish is cooked thoroughly.
Heat oil in a pan on medium heat. Add the sliced peppers and onions and fry for approx 6-7 mins, stirring occasionally. After a couple of minutes, sprinkle over the remaining half a tablespoon of seasoning and stir in.
Serve the fish, peppers and onions on the tortillas. Serve with lettuce, salsa, guacamole and sour cream. Enjoy!
