Harrisa chicken traybake is a delicious and flavourful dish that uses our spicy and aromatic Harrisa & Rose Seasoning. This Middle Eastern-inspired recipe is not only easy to make but also incredibly satisfying.

Harrisa & Rose Chicken Traybake Recipe*

You will need...
Ingredients
2 tablespoons of Great Northern Spice Harrisa & Rose Seasoning
4 large boneless and skinless chicken thighs, diced
1 tablespoon rapeseed or olive oil
1 red onion, sliced into chunks
1 red bell pepper, sliced
2 portobello mushrooms, sliced
Handful of green beans, ends chopped and cut in half
1 tin of chickpeas, drained and washed
Cous cous or flatbreads to serve
Veggie / Vegan option...
Add diced sweet potato and wilted spinach
Swap chicken for halloumi (vegetarian)
Swap chicken/halloumi for tofu (vegan)
How to cook
Preheat your oven to 200 degrees.
In a large non-stick deep baking tray, layer all your vegetables and add 1 tablespoon of our Harrisa & Rose Seasoning.
Next, add your chicken thighs (or halloumi / tofu) on top of the vegetables, add 1 tablespoon of oil and an additional tablespoon of our seasoning.
Pop the tray in the oven to cook for 15 minutes.
After 15 minutes, add your chickpeas to the tray and give everything a stir.
Cook your traybake for a further 10 minutes or until your chicken is cooked through, or your halloumi/tofu is cooked.
When you're ready to serve, plate up with cous cous or a flatbread.
