Italian Chicken Pasta Recipe
You will need...
Ingredients
2 tablespoons of our Great Northern Spice Sicilian Herb Seasoning
300g diced chicken thigh or breast, boneless & skinless
2 tablespoons rapeseed oil (or olive oil)
1 teaspoon garlic paste
1 small brown onion, finely diced
2 tablespoons tomato puree
200ml passata
125ml double or heavy cream
Parmesan (grated)
Your choice of pasta (we used a spinach & ricotta tortellini)
How to cook
Heat the oil in a large pan on a medium-high heat.
Add the onion and chicken then sprinkle over 1 tablespoon of our Sicilan Herb Seasoning. Fry your chicken for 15 minutes, turning halfway through.
In a separate saucepan, add pasta and boiling water, ensuring the pasta is covered. Cook on a medium to high heat for 10-12 mins.
In a separate small pan on a medium to high heat, add a splash of oil, garlic, tomato puree and passata and cook for 5 minutes.
Reduce the heat and add the double cream and parmesan. Stir in until the sauce has a nice creamy consistency.
Add 3 tablespoons of pasta water to the sauce and stir, then drain the pasta. Add to the pan of sauce and stir to coat the pasta.
Serve the pasta in a bowl, place the chicken over and grate over a little bit more parmesan. Enjoy!
