Jalfrezi Curry Veggie Recipe

Jalfrezi Butternut & Chickpea Curry Recipe


You will need...


Ingredients

  • 3 tbsp of our Great Northern Spice Jalfrezi Curry Blend

  • 1/2 butternut squash, diced in to small chunks

  • Small head of a cauliflower, broken in to florets

  • 2 tbsp rapeseed oil (or olive oil)

  • 2 garlic cloves, chopped, or 2 tsp garlic paste

  • 2 tsp ginger paste or chopped ginger

  • 1 medium red onion, sliced

  • 1 small red bell pepper, sliced

  • 1 small green bell pepper, sliced

  • 1 tbsp tomato purée

  • 150ml vegetable stock (we use Knorr Stock Pots)

  • 400g tin of chopped tomatoes

  • 400g tin of chickpeas, drained


For an extra healthy curry...

  • Add a handful of fresh spinach leaves, stalks removed (optional)


How to cook

  1. Heat the oil in a large pan on a medium-high heat.

  2. Fry the red onion and bell peppers for 3 minutes or until it softened.

  3. In a large bowl, add the diced butternut squash and cauliflower, splash over a tbsp of oil and mix in 1 tbsp of our Jalfrezi Curry Blend.

  4. In the frying pan, add garlic, ginger, tomato puree along with the remaining 2 tbsp of our Jalfrezi Curry Blend. Mix in and fry for another 2 minutes.

  5. Add the butternut squash, cauliflower, chopped tomatoes and veggie stock, then simmer for 5 minutes, stirring occasionally.

  6. Now add the drained chickpeas and stir in. Leave to simmer for a further 10 minutes. Tips: For an extra healthy curry, stir in a handful of fresh Spinach leaves and leave to wilt for around 3-4 minutes before serving. For a creamier curry, add 2 to 3 tbsps of double cream and stir in before serving.

  7. Ensure your butternut squash is nice and soft, then serve with your choice of side, garnish with fresh chopped coriander and enjoy!
